Three ways to make Passover Preparation Easier and Cheaper

8 Apr

Preparing Your home for a Kosher Week of Passover can be daunting!

You can do it if you stay away from convenience foods

Delicious Stuffed Cabbage for Passover

and concentrate on proteins and vegetables and a few side items.

Simple menus and a bit of home cooking will make it delicious…and far healthier as most “convenience” foods are way too high in salt, sugar and not the freshest ingredients, hence lower in nutritional value.
Let me know if you need the recipe including diced fresh tomatoes, ketchup
and diced onions/ (We just ate it tonight, yummy)

Secondly. Baked boxes of cookies and cakes are running $10 and more during Passover. Avoid this. With 4 egg whites salt(a pinch), and cocoa with optional chocolate chips and nuts make over 50 meringues. Brownies will need 4 eggs, potato starch, sugar cocoa and chocolate chips or nuts make Platters of brownies.

Use the KISS method, Keep it Simple. Roast veggies, mashed potatoes with caramelized onions.

Morrocan chickpea stew

5 Aug

Morrocan chickpea stew

Sautée onion , garlic, carrots, celery. Add cumin, cinnamon, and pepper . Add 8 ounces soaked garbanzo beans and sweet potato along with 4 cups broth or water . Bring to boil, cover and simmer for one hour. Add 2/4 cup of tomato sauce and salt. serve with brown rice

I wanted to be more specific with this recipe which I made again. I had gotten part of the recipe on the package of dried beans and adapted some of the additions based on what I had in my pantry.

Soak half a pound of dried garbanzo beans/chick peas for an hour or more and drain. In a Dutch oven add a Tbsp. of olive oil or other vegetable oil to a pan, Add 1 large onion (sliced or diced), 2 to 4 cloves garlic, a few sliced carrots and celery ribs and saute on medium . As it cooks add 2 tsp. cumin, 1tsp cinnamon, black pepper, and add 4 cups of broth or water (By the way, don’t add the salt until the beans are soft). Cook for about one hour until the beans are soft . Add salt to taste. Add one peeled and diced sweet potato. when the potatoes are cooked through enjoy!
Vegan unless you used chicken broth.
Let me know when you try it.

Passover Prep. One day at a time

18 Mar

From 2 years ago. this bears repeating.
I am putting together recipes for a client (seder for 14), and my own family (two seder for 3 to 7 people.0

Since my client wants brisket, poached salmon for 5 , gefilte fish, brownies (no nuts!) and many of the usual side dishes, i am checking for the best possible recipes. I also have to plan on containers for each of us, foil pans, heavy duty foil(LOTS OF IT) for the counters as well as wrapping food for the client, parchment paper, special dish soap, a new salt, pepper, sugar, paprika, cinnamon etc.
So many of these staples need to be kosher for passover, extremely detailed laws concerning this….

Got recipes and most of shopping list together, but it is too early to shop. Need to be rid of all chametz. Such a challenge.
More on chametz tomorrow

Since my husband has Celiac and can’t eat wheat, I was making brownies with potato starch and tried several recipes. Then, hubby decided no more chocolate or cocoa!

I looked over other brownie recipes and came up with this  which is enough for a small brownie pan.  It would be doubled or tripled for a 13 by 9 pan.

Meringue cookies

4 Jan

Today i mademeringue cookies for shabbos as I was not sure what (or if) my husband would bring home from the shopping list.

I found the recipe on the Food Network site by Emeril and did not have cream of tartar to fluff up the meringues so thay will be flatter cookies.  At least there will be some gluten free dessert for him as he now wont eat nuts or chocolate either…He came home with corn starch rather than the gluten free baking mix…Let’s see ehat i can do with only potato starch and no chocolate.  ideas????
